Follow the quiet presence of the Iron Goddess of Mercy and step into the birthplace of one of China’s most beloved oolong teas.

Tie Guan Yin, or Iron Goddess of Mercy, originates from Anxi County in Fujian Province and is revered for its expressive aromatics, elegant structure, and remarkable range, from fresh and floral to warm, roasted, and contemplative.

In this 90-minute guided tasting, we explore a curated lineup of Tie Guan Yin styles, selected to highlight how processing, roasting, and craftsmanship shape the character of this iconic tea. The specific teas may vary by session, offering returning guests a new experience each time.

Through gongfu-style preparation, storytelling, and sensory exploration, we will explore:

  • The origins and cultural significance of Tie Guan Yin

  • How processing choices influence aroma, texture, and finish

  • How aging changes the leaf through time

  • The spectrum of styles found within Anxi oolong, from bright and jade-like to deeper, roasted expressions
