India is home to some of the world’s most recognizable tea regions — but there is far more to discover beyond the familiar cup.

For this edition of The Pairing Table, we travel through India by way of tea and food, exploring how geography, elevation, cultivar, harvest, and processing create remarkably different expressions from one growing region to another.

Throughout the afternoon, we’ll taste a curated progression of Indian teas alongside thoughtfully selected bites. Each pairing is designed to reveal something different in the cup — amplifying aroma, softening tannin, drawing out sweetness, changing texture, or introducing an entirely new dimension to the tea.

This is not simply tea served with food. We’ll explore why a pairing works, what happens when flavor and structure meet, and how tea can be approached with the same consideration traditionally given to wine or other beverages at the table.

What to Expect

A Journey Through Indian Tea
Taste teas representing distinct regions, styles, and expressions of Indian terroir. We’ll explore the differences created by geography, season, processing, and tea plant material while expanding the idea of what “Indian tea” can be.

Tea + Food Pairing
Each tea will be served with a complementary bite selected to highlight or contrast specific qualities in the cup. We’ll look at aroma, sweetness, acidity, bitterness, astringency, richness, texture, and finish — and how food can transform the way we perceive each one.

Learning to Pair
Rather than simply deciding whether something tastes good together, we’ll begin developing a framework for pairing tea with food: when to complement, when to contrast, and how intensity, structure, and flavor influence the relationship between cup and plate.

Beyond the Familiar
Expect both recognizable Indian tea traditions and expressions that may challenge what you think you know about the country’s tea landscape.

The experience unfolds as a guided tasting around a shared table, with time to taste, compare, discuss, and allow each pairing to reveal itself.
