  • Nilgiri white tea, a rare gem from the rolling hills of Ooty, Tamil Nadu, is celebrated for its gentle and subtle flavor profile, which reflects the unique environmental conditions of the region. Known for its cool climate and high altitudes ranging from 1,000 to 2,500 meters, Nilgiri provides an ideal setting for the slow growth of tea bushes, enriching the tea's aromatic complexity. This tea is crafted from the youngest leaves and buds, plucked early in the season to ensure premium quality and is minimally processed to preserve its natural antioxidants, resulting in a pale, golden infusion with a light, refreshing taste.

    The economic and cultural fabric of Ooty is interwoven with the production of tea. While not as globally renowned as Darjeeling or Assam teas, Nilgiri teas supports the local economy by providing vital employment opportunities in remote areas and promoting sustainable agricultural practices.   • Preparation Method

    1. Western Preparation:

      • Use 2-3 grams of tea per 6-8oz of 170-180°F (77-82°C) using a teapot, kyusu or infuser mug.

      • Steep for 1-3 minutes

      • Good for multiple steeps

    2. Open Vessel Steeping

      • Use 2 grams of tea per 100ml of water at 170°F (76°C) using a glass open strainer pitcher

      • Steep for 1 minute

      • Increase steeping time by 30 seconds with each subsequent infusion

      • Enjoy multiple infusions to savor the evolving flavors

  • Cold steeping involves combining tea and cold water, allowing it to steep over an extended period. This method is ideal for green teas, white teas, light to mid oxidized oolong teas, and some botanicals.

    1. Measure:

      • Use 1 gram of tea per 2 oz of water.

    2. Combine:

      • Place tea leaves in a vessel and add cold, filtered water based on the ratio.

    3. Steep:

      • Refrigerate and steep for 4 to 24 hours. Use less tea for longer steep times to avoid over-extraction.

    4. Strain and Serve:

      • Strain the tea leaves and serve over ice or as is.

    5. Enjoy:

      • Relish the refreshing and flavorful cold-steeped tea, perfect for any time of the day.
